Fairy Cakes
Easy peasy fairy cakes!
Makes 12-15
You will need:
100g Soft margarine or butter100g caster sugar
100g Plain flour
5ml (1level tsp) baking powder
2 eggs
Paper cases
Bun tin (although I have made them successfully without a bun tin and just had the paper cases on baking paper on a baking tray)
Icing - Personal choice really. I love making and eating butter icing (soft butter mixed with lots of icing sugar).
What to do:
- Preheat oven to 190 degrees celsius (180 degrees for a fan assisted oven)
- Measure the flour and add level tsp of baking powder. Mix with a spoon and sieve into a large bowl
- Measure all the remaining cake ingredients into the bowl and mix well until the mixture is smooth
- Spoon into the paper cases until half full
- Bake in the centre of the oven for 15 - 20 mins
- Do not open the oven door whilst the cakes are cooking
- The cakes should be well risen and spring back when pressed lightly with a finger
- Leave to cool and ice
